Would cards like Card Destruction, Morphing Jar,Dark World Dealings, Beckoning Light and Brionac Dragon of the Ice Barrier trigger the effects of Fabled monsters like Catsith, Lurrie and Currburrel? What if more than one of those cards were discarded? (eg. Brionac discarding Catsith and Lurrie)

Yes all the mentioned cards will trigger Fabled monster's effects. And if multiple Fabled monsters are send to the graveyard by the same effect they will trigger at the same time and you will be able to summon all of them.
